OUR WAITERS
Smiles, attention, and something in the glass right away! We have 12 waiters and headwaiters, in addition to 5-6 apprentices. Our waiters practice their craft in uniform and with knowledge. Several are also trained sommeliers. By having apprentices, we uphold the profession and teach techniques such as flambéing, carving, Russian service, bar work - and perhaps most importantly: service!
Maitre d'Hotel – Sverre Sivertsen
Sverre has been with us since 2004 and is also a co-owner. As the restaurant manager, he has many tasks, but you often meet him at the door. Sverre is a true restaurant man, with full control over waiters, guests, and food that needs to go out. He also has the good quality of remembering the many different wishes or needs our regular guests may have. If you have been with us before, Sverre will surely recognize you!
Maitre d'Hotel – Isabelle Kirkerud
Isabelle has also been with us for many years. She started as an apprentice with us and has worked her way up to the position of assistant maître d' today. In between, she has had 'breaks' from Brasserie France, either with studies in tourism or jobs in other restaurants. With her good stamina and calm demeanor, she is an important leader in an ever-busy environment! Isabelle thrives best when the wind blows the hardest!
Maitre d'Hotel – Maria Suarez
Maria did her apprenticeship with our friends at Statholdergaarden. As a 'daughter of the house,' Maria has almost grown up in a restaurant, and with her good energy and cheerful laughter, she is an important colleague you meet at the door. Maria also leads the training of our waiter apprentices, in addition to being part of the restaurant's leadership team.
Alle våre servitører har enten fagbrev eller vinkelnerutdanning. Og vi har mange med lang erfaring - i tillegg til at vi til enhver tid har fra 4 til 6 lærlinger vi forsøker å gjøre enda dyktigere enn oss! Vår service skal være 'old school' - alle har uniform, vi pusser skoene daglig, vi kan alle mat og vin, vi flamberer, blander tartar, anretter ost og dessert. Vi er eksperter på service!
